Cheese & Potato Stuffed Beef Rolls

A simple, easy to follow video on creating stuffed beef Rolls

INGREDIENTS

  • 10pcs x 2mm thick Beef Topside or Rump
  • 2 Large peeled Potatoes cut into 1/2cm Cubes
  • 1 cup Grated Fiori De Latte or Mozzarella Cheese
  • 1 large onion, diced 
  • 1/2 bunch Chives, finely chopped
  • Olive Oil
  • Pinch Sea Salt 

METHO
Sauté the onions and potatoes in olive oil until soft and golden brown then add the cheese, chives and salt and allow to cool before stuffing the beef.

Lay a piece of beef out and place 2 spoonfuls of the mixture in the centre, fold each side over the mixture then roll from the bottom creating a cigar shape. repeat. (watch the video for step by step visual instructions)

Preheat the BBQ or Grill to medium high heat, drizzle each roll with olive oil and a little sea salt and cool on each side for a couple of minutes until the cheese has melted. 

Serve with a salad if you manage to wait that long...
