Removing the gem of the Garlic will reduce the bitterness

The older garlic gets the more bitter it becomes however a little trick to reducing the bitterness is to simply remove the gem (the core) with the tip of your knife.  

It's a great little trick to have, especially when making pesto or using garlic in a Post Marinade
