This is a staple in my house. Super quick, super easy, super cheap and super tasty… just super!

Ingredients
- 250gm pasta (whichever you like best)
- 1 tin chopped tomatoes
- 250gm bacon (sliced into 1/2cm strips)
- 1 teaspoon brown sugar (optional)
- 1 pinch of sea salt
- Extra Virgin Olive Oil
- chopped parsley
Method
Bring water to the boil and then heavily salt (so it tastes like the sea). Cook the pasta to the packets instructions.
Meanwhile, fry the bacon for 4-5 minutes in a light drizzle of olive oil on a medium to high heat, stirring a few times until golden brown and crispy. Throw in the tin of chopped tomatoes and the sugar (if using) then cook for a further 2-3minutes until slightly reduced then take off the heat. Stir in ⅔ of the chopped parsley.
Drain the pasta (retaining a cup of the water).
Mix the sauce through the drained pasta to coat well, If it's looking a little dry, add some of the retained water and mix through. To serve, sprinkle the remaining parsley over the top and drizzle with a little extra olive oil. you can add a little parmesan cheese if you like.
